Ingredients
- 3 lbs Yukon Gold or russet potatoes
- 4 hard-boiled eggs, chopped
- 1 cup mayonnaise
- 2 tbsp yellow mustard
- ¼ cup sweet pickle relish
- 2 celery stalks, finely diced
- ¼ cup sweet onion, finely diced
- 1 tsp celery seed (optional)
- Salt and black pepper to taste
- Paprika for garnish
Directions
Boil the potatoes until just fork tender. Let them cool slightly before peeling (if desired) and cutting them into bite-sized pieces. In a large bowl, whisk together the mayonnaise, mustard, relish, celery seed, salt, and pepper. Fold in the potatoes, celery, onion, and chopped eggs until everything is evenly coated.
